What full-grain cowhide is
It is the first layer of the hide, the dermis of the animal. On a cut cross-section you can normally see the dermis and the subcutaneous tissue beneath it. The surface carries the skin's original features — scratches, scars and insect bites. Because these sit in the dermis, they remain visible in the finished leather.

It comes from the outermost layer of the hide and becomes the cowhide we use after tanning. Tightness varies across a single hide, so when cutting we allocate by area: the firmest sections go to patches that must hold shape and take load, while looser sections suit products that need more softness.
Use
Full-grain is the best of the hide precisely because it is the first layer. That is why it is used largely for high-grade leather goods, including the back-waist labels, patches, pull tabs and charms we make for apparel.
